Chipotle Chicken Soup
ingredients
meat of one rotisserie chicken, shredded
2 T olive oil
1 medium onion, diced
1 clove garlic, minced
1 tsp cumin
1 chipotle pepper in adobo sauce, chopped (or more if you like it spicy)
4 cups chicken stock
1 cup canned whole tomatoes, roughly chopped
2 T cilantro, chopped
fresh squeezed lime juice
optional toppings
thinly sliced scallions
avocado slices
tortilla strips or chips
grated cheddar cheese
sour cream or creme fraiche
In a 2 quart soup pot, heat olive oil over medium heat and add diced onion. Cook until translucent, about 5 minutes. Add garlic, cumin and chipotle pepper(s), and continue cooking for another minute. Add chicken stock and tomatoes, bring to a gentle boil and reduce heat to a simmer. Simmer for about 15 minutes, to allow the flavors to meld.
Add the shredded chicken and simmer until chicken is warmed through. Taste and add salt and pepper as necessary.
Ladle into bowls and top with fresh cilantro, a squeeze of lime, and any of the optional toppings.
