spicy shrimp with soba noodles

ingredients:

  • 1 lb peeled, deveined large shrimp

  • 1 tsp lime zest

  • 3 T freshly squeezed lime juice, plus extra lime wedges for garnish

  • 3 T soy sauce

  • 2 tsp Thai red curry paste

  • 1 T sriracha chili sauce

  • 2 T brown sugar

  • 1 T olive oil

  • 1/2 red pepper, julienned

  • 1/2 yellow pepper, julienned

  • 2 scallions, thinly sliced

  • handful of cilantro, roughly chopped

  • 1 T vegetable oil

  • 8 oz soba noodles

steps:

Bring a pot of water to boil and cook soba noodles as directed. Rinse and set aside.

In a medium sized bowl, combine lime zest, lime juice, soy sauce, curry paste, chili sauce, brown sugar and olive oil. Whisk to combine. Pour half the marinade in separate container and set aside. Add shrimp to the remaining sauce and let marinate in fridge for about 15 minutes.

While shrimp marinates, prep your vegetables.

Heat a large frying pan or cast iron skillet and add 1 tablespoon of vegetable oil. Saute shrimp over medium heat until cooked through. About 3 minutes. Add the cooked soba noodles, the remaining sauce, peppers, scallions and cilantro. Toss to combine and top with chopped peanuts and an extra squeeze of lime juice.
