shakshuka
Although traditionally a breakfast dish, I love it as a quick, healthy and delicious dinner. You can serve it over rice, but I prefer soaking up the sauce with some warm flat breads, like naan or pita.
Ingredients:
2 T olive oil
1 onion, diced
1 red pepper, diced
4-5 garlic cloves, minced
1 ½ tsp cumin
1 ½ tsp smoked paprika
½ tsp cinnamon
Red pepper flakes
½ tablespoon harissa
1 tablespoon tomato paste
28 oz canned, diced or crushed tomatoes
6 eggs
Crumbled Feta
Fresh herbs (parsley, cilantro, dill)
Steps:
Sauté onion and pepper in olive oil until soft and translucent.
Add garlic, tomato paste and spices, sauté 2-3 minutes.
Add harissa and tomatoes, bring to boil, then simmer 15 or 20 minutes.
Crack eggs on top and poach (or fry eggs separately and place on top)
Sprinkle with feta and fresh herbs and serve with some flat bread.
