shakshuka

Although traditionally a breakfast dish, I love it as a quick, healthy and delicious dinner. You can serve it over rice, but I prefer soaking up the sauce with some warm flat breads, like naan or pita.

Ingredients:

  • 2 T olive oil

  • 1 onion, diced

  • 1 red pepper, diced

  • 4-5 garlic cloves, minced

  • 1 ½ tsp cumin

  • 1 ½ tsp smoked paprika

  • ½ tsp cinnamon

  • Red pepper flakes

  • ½ tablespoon harissa

  • 1 tablespoon tomato paste

  • 28 oz canned, diced or crushed tomatoes

  • 6 eggs

  • Crumbled Feta

  • Fresh herbs (parsley, cilantro, dill)

Steps:

  • Sauté onion and pepper in olive oil until soft and translucent. 

  • Add garlic, tomato paste and spices, sauté 2-3 minutes.

  • Add harissa and tomatoes, bring to boil, then simmer 15 or 20 minutes.

  • Crack eggs on top and poach (or fry eggs separately and place on top)

  • Sprinkle with feta and fresh herbs and serve with some flat bread.
