 Patatas Alioli

Ingredients

  • 1 lb baby potatoes

  • 1 roasted red pepper

  • 1-2 garlic cloves

  • 3 sundried tomatoes in oil

  • 1/4 tsp smoked paprika

  • 1/4 tsp hot paprika, or red pepper flakes

  • 1/2 tsp salt

  • squeeze of lemon juice (about 1 tsp)

  • 1/4 olive oil

  • 1/4 vegetable oil

  • 1 T parsley, chopped

Steps

Place potatoes in a pot of cold, salted water. Bring to a boil and cook about 12 minutes, until a knife can cleanly pierce the center of the potato. Drain and set aside. When cool enough to handle, peel off skins. You may also leave skins on, if you prefer.

While potatoes are boiling, make the alioli. In a food processor, pulse remaining ingredients until smooth, except oils and parsley. With motor running, slowly add the oils to emulsify the sauce. Taste and adjust seasonings if necessary.

Toss sauce with potatoes, sprinkle with chopped parsley and serve warm or room temperature.
